Leftover Makeover pt. 2: Buffalo Chicken Pitas

Time for another leftover makeover where I do my best to turn leftovers into a brand new, delicious meal!

This leftover makeover all started with Keelin’s baptism. We asked our closest friends and family members to join us after the baptism for a nice luncheon at the house. We had a tasty spread of fruits, veggies, pita and hummus and the MAIN DISH… a yummy chicken finger platter from Chick-fil-A. When Z and my dad went to pick up the platter they asked if we wanted any additional sauces outside of the big tub you get with the order. Of course we took them up on the offer, so we’d have plenty of options for our guests, but we NEVER would have expected how much they’d give us!

This is only about 3/4 of what they gave us... the rest we used during the luncheon! BBQ, Chick-fil-A, Honey Mustard, Buffalo, Ranch, Polynesian, THE WORKS!

The baptism was almost a month ago and we still have the majority of the bag sitting on our counter waiting to be used!

Anyway… One day a few weeks ago, when Z had off work, I was trying to come up with a quick and easy lunch for the two of us. Something more than a PB&J but something that didn’t require any actual COOKING! The vast wonderland that is our frig revealed that we had some leftover chicken and pita pockets leaving me with a great idea!

Buffalo Chicken Pitas!

Leftover chicken, meet the magic bullet!

SUPER finely chopped!

buffalo and ranch... a perfect combo! I know people usually use bleu cheese for buffalo chicken dishes but we prefer ranch! Either will work

Fill the pita pockets with chopped chicken, diced tomatoes and shredded lettuce. {add cheese if you want… we didn’t have any}

I used the bowls to prop the pitas up for easier packing.

Top it off with the buffalo and ranch sauces. One packet each per two pockets.

HOLY YUM! I ended up making these for lunch the next day as well!

It was super delicious, super easy, and well worth sharing… so share I shall.

    PS — did you send out invites for the baptism?? Not sure what denomination you are but we’re methodist and can’t decide how to spread the word.
